Honey Chipotle Drumsticks…

Now, the recipe portion of this post isn’t going to be anything spectacular, but our new favorite ingredient is Chipotle Salsa. As an aside, we haven’t come across an organic version as shown in the link, but it’s good to know it’s out there, and I’ll have to keep my eyes open for it. But anyway…

For these drumsticks, Mr. BFF used about half a can of the Chipotle Salsa. Then he basically added honey, starting with maybe 3 Tbsp, and continuing to add honey until it was adjusted to our tastes. He brushed the drumsticks with olive oil and baked them in the oven for approximately 25 minutes. Next, he took them out to the grill to get a bit of a crisp on them. Finally, he brushed them with the Honey Chipotle glaze and returned them to the oven for about 20 minutes more. They were very tasty, especially with some Blue Cheese Dressing for dipping! 🙂 The Chipotles have such a great smokiness to them… Very nice Football Sunday finger food, with plenty of leftovers. We ended up pulling the tail end of the leftover chicken off the drumsticks and added it to a salad later that week.

We’ve used this Chipotle Salsa as a spread for sandwiches and crackers, as a glaze for chicken (so far), as a dressing for a salad, and I think Mr. BFF has used it with a pizza. It started here, with an idea for cherries and chipotles, and it’s been yummily growing ever since. 🙂
