After the rich indulgences of bringing in the New Year, I knew I’d feel the need for something hearty and healthy. So, I ended up making the salad shown above. The total ingredients are: lentils, tomatoes, feta, green onions, olive oil, and a dash of a basil & garlic blend. And yes, it did hit the spot for lunch yesterday (and today). We’re still cleaning out the fridge of leftovers in the evenings, but this dish feels good in the afternoons.
