This Week in ‘This Week’…

Well, I’m glad I went to the grocery store last night and stocked up for the week… It’s snowing out there and the ride home was okay, but not ideal. I’ve got our menus all planned out for the next few days, and Mr. BFF is working on a chipotle-peanut butter type of sauce for some chicken tenders this weekend… Breaded with panko breadcrumbs. I actually asked my parents to see if they could find some when they were out to visit last month, because I couldn’t find any here. Harrumpf… Of course, since then I have seen panko at the grocery store, although it is in an odd location.

So, last night, after shopping and such, it was a free-for-all. I ended up with a pesto cheese bagel… always a winner with me. šŸ™‚ Tonight, I made Skillet Gnocchi. We’ve had it once or twice before and it’s pretty good. I’d like to figure how to crisp up the gnocchis better, but it’s still tasty! It features gnocchi, diced tomatoes, baby spinach (which the cat was battling me for as I cleaned it), mushrooms, garlic, onion and mozzarella cheese. Not much to go wrong with here…

Tomorrow, I’m going to try an inside-out of sorts chicken cordon bleu, such as is found here. It’s basically chicken with the ham, cheese and breadcrumbs on the outside, instead of rolling it up inside. Seems quick-ish and easy for a weeknight, and I’m curious about it… I’ve been noticing that a lot of my recipes and variations begin with something I find at Eating Well… I think I got my first subscription to that magazine over 10 (if not 15) years ago. Yes, I’ve always liked it… šŸ™‚
