I was hoping to find a picture of this chicken, but alas, I could not. I’ve used it on full chicken breasts beforehand, but last night, I cubed the chicken and we had it in a wrap. Slightly more summery, I suppose… Anyway, here it is:
- 1/4 cup olive oil
- 2 Tbsp peanut butter
- 2 Tbsp brown sugar
- Healthy dashes of: onion powder, garlic powder, ground thyme
- 2-3 good dashes of Worcestershire sauce
Combine ingredients in large ziploc bag. Add chicken breasts. Marinade in refrigerator overnight. Cook chicken as desired. This marinade makes a good amount for 1 – 1-1/2 lbs. of chicken. As always, adjust seasonings to taste. Enjoy!
